Basic mayonnaise
Herb aioli
Capsicum and caper mayonnaise
Method
1.Arrange prawns on serving platter. Cover and chill until required.
2.BASIC MAYONNAISE: In a food processor or blender, process egg yolks, juice and mustard until smooth.
3.While motor is running, gradually pour in oil in a thin stream and process until thick. Season to taste.
4.HERB AIOLI: Combine all ingredients in a small bowl. Season to taste.
5.CAPSICUM and CAPER MAYONNAISE: In a food processor or blender, process all ingredients until smooth. Season to taste.
6.Serve prawns with sauces.
Add a dash of Tabasco to Capsicum and Caper Mayonnaise for a spicy taste.
