Method

1.Combine mince, onion, rice, parmesan, basil and egg in a large bowl. Season with salt and pepper. Shape mixture into 8 patties. Place on a large plate. Cover with plastic food wrap; chill for 10 minutes.
2.Pour passata and stock into a large, deep frying pan over high heat. Bring to the boil. Add patties. Reduce heat; simmer, covered, for 25-30 minutes or until patties are cooked and rice is tender.
3.Spoon patties and sauce onto serving plates. Serve with salad.

Replace parmesan with finely grated tasty cheese. Omit basil. You can use tomato pasta sauce instead of passata; consistency will vary slightly.
