Method

1.Cook pasta in boiling, salted water according to packet directions. Drain and return to pan.
2.Meanwhile, heat oil in a large frying pan on medium. Cook sausage for 4-5 minutes, until browned. Add mushroom and garlic and cook for 2-3 minutes, until softened. Add tomatoes, stock and freshly ground pepper to taste and cook for 5 minutes, until reduced slightly.
3. Increase heat to high. Add sauce, parsley and cream to pasta and toss. Top with parmesan.
