Method

1.Combine stock and saffron in a saucepan and bring to boil on medium heat. Meanwhile, in a large paella pan or large deep frying pan, heat oil on high. Cook chicken for 3 minutes each side, until golden. Remove from pan.
2.Cook chorizo in same pan on medium for 2 minutes, until crisp and brown. Remove from pan. Add capsicum, onion and garlic to pan and cook for 3-5 minutes, until soft. Add rice and cook on low heat for 2-3 minutes. Pour over hot stock, cover and simmer for 15 minutes.
3.Without stirring, slice chicken and arrange over rice with chorizo, tomato and peas. Cover and simmer for 5-8 minutes, until rice is cooked and peas are hot. Serve.
