Method
1.Fill a medium saucepan with the water, add ginger, bring to the boil; reduce heat to low. Add chicken to pan; simmer for 10 minutes or until chicken is cooked through. Remove chicken and ginger from pan; discard ginger, reserve poaching liquid.
2.Return poaching liquid to the boil. Add noodles; cook for 3 minutes. Add beans and chard to pan; cook for 1 minute. Drain; return noodle mixture to pan.
3.Shred chicken; add to noodle mixture with onion.
4.Combine sauce, honey, juice and garlic in a small bowl; drizzle over noodle mixture to serve.
You can use silver beet or spinach if you are unable to get rainbow chard.
