1.Break pasta sheets into big pieces. Cook in a large saucepan of boiling, salted water for 2-3 minutes, until al dente. Drain, reserving 1/3 cup cooking liquid.
2.Meanwhile, heat the butter and oil together in a large frying pan on high. Add mushrooms, garlic and thyme. Cook, stirring occasionally, for 2-3 minutes, until tender. Season to taste.
3.Add pasta to pan with cheese, reserved liquid and sage. Toss well to combine. Serve sprinkled with extra parmesan.
