Method

1.Cook penne pasta in a large saucepan of boiling, salted water, following packet instructions. Meanwhile, heat olive oil in a large frying pan on medium.
2.Sauté onion and crushed garlic clove for 1-2 minutes until tender. Add chorizo and cook, stirring, for 3 minutes.
3.Stir in mexi beans and diced tomatoes. Bring to the boil on high. Reduce heat to low and simmer for 3 minutes. Season to taste.
4.Drain pasta and return to pan. Toss sauce and basil leaves through. Top with crumbled feta and extra basil leaves.
5.Serve with a side salad.
