Maple rosemary rack of lamb

The succulent savoury flavours of rosemary roast lamb are complimented by the sweetness of the maple vegetables.

Method

1.Preheat oven to moderate, 180°C.
2.Arrange potatoes in a baking dish. Place racks on top. Rub with olive oil and sprinkle with rosemary.
3.Roast lamb for 20 minutes. Add mushrooms, tomatoes and garlic to dish. Continue roasting for 5-10 minutes until racks are cooked to taste.
4.Remove racks from dish. Rest, covered loosely with foil, for 10 minutes.
5.Place asparagus into a microwave-safe dish with sprinkling of water. Cover with plastic wrap and microwave on high (100%) power for 1-2 minutes until just tender.
6.Drizzle vegetables with maple syrup. Return to oven for a further 5-10 minutes until vegetables are tender. Stir asparagus through.
7.Cut each rack in half. Serve lamb with vegetables.
