1.Place pork in a ceramic dish. Drizzle with maple syrup and season with salt and pepper. Rub maple syrup into the meat to coat evenly.
2.To make salsa, combine craisins, cucumber, chopped spring onions, coriander, chillies and vinegar in a bowl with 2 tablespoons olive oil. Season with salt and pepper and toss well.
3.Heat a char-grill pan or large non-stick frying pan on medium. Cook pork chops for 3 to 5 minutes on each side, or until cooked to your liking. Serve topped with cranberry salsa.
