Method
1.In a large bowl, combine wine, vinegar, oil, thyme, garlic and mustard. Season to taste.
2.Add steaks, turning to coat in marinade. Chill, covered, 3 hours or overnight.
3.Spray a barbecue or char-grill with oil. Preheat on high. Seal steaks 4-5 minutes on each side -juices will appear on the uncooked side, indicating the meat is ready to turn. Baste with marinade during cooking. Remove immediately for rare steak, or cook to taste.
4.Rest steak, covered, 5 minutes. Serve with salad, and potato wedges, if desired.
For medium or well-done steaks, move meat to a cooler part of the barbecue (or turn down heat) and cook for a further 2-3 minutes each side for medium and 4-6 minutes for well done, basting throughout.
