1.Place chicken in a large shallow glass or ceramic dish. Whisk hoisin sauce, honey, sesame oil and garlic in a medium jug; pour half the mixture over chicken. Turn to coat. Cover with plastic food wrap: chill for 30 minutes, turning occasionally, to marinate. Reserve remaining marinade.
2.Preheat oven to 200°C (180°C fan-forced). Place 1 cup water in a large roasting pan. Spray a wire rack with oil, then place in prepared pan. Drain chicken from marinade; discard marinade. Place chicken on rack.
3.Bake for 15 minutes. Brush with reserved marinade. Bake for 15 minutes more. Sprinkle with sesame seeds. Bake for 5 minutes or until glaze is sticky and seeds are toasted.
4.Combine carrot, cabbage and coriander in a large bowl. Whisk mayonnaise, lemon juice and 1 tablespoon hot water in a small jug; add to carrot mixture. Toss to combine. Serve chicken with salad and lemon wedges.
