Parsley butter

Method

1.To make parsley butter, soften butter in a small bowl. Stir in parsley and lemon juice. Season to taste and set aside.
2.Preheat a chargrill on high. Brush steaks with oil and season with pepper to taste. Cook, turning once, then rest. Top each steak with parsley butter and serve with potatoes and salad.

Remove steaks from the refrigerator about 15 minutes before grilling for a better flavour and shorter cooking time.
