Method

1.Preheat oven to 220°C or 200°C fan-forced. Line two baking trays with baking paper and lightly spray with cooking oil.
2.Cut potatoes into 5mm slices, then cut slices into 5mm-thick fries. Place fries in a single layer on prepared trays. Spray with cooking oil spray. Bake for 15 minutes, turning once or twice, until golden.
3.In a small saucepan, heat evaporated milk on medium. Lightly whisk in mustard and simmer very gently for 5 minutes. Stir through tarragon or parsley and season to taste. Set aside.
4.Preheat grill or chargrill on high. Brush steak with a little oil and season with pepper. Grill for 3-4 minutes each side for medium, or until cooked to taste. Remove from heat and set aside to rest for 5 minutes. Spoon mustard sauce over steak and serve with fries and green salad.
