1.Place orange juice, rum, honey and mustard in a glass or ceramic dish; mix to combine. Place ham steaks in a single layer in dish; turn to coat. Cover with plastic food wrap, then chill for 1 hour to marinate; turn occasionally.
2.Preheat a large char-grill pan to moderate. Add orange slices; cook for 1-2 minutes each side or until warmed. Transfer to a heatproof plate. Add onion, mint, chilli and vinegar to oranges; turn gently to coat.
3.Drain marinade from ham; cook on char-grill for 2-3 minutes, each side, or until heated and light grill marks appear. Serve ham steaks with orange salad, mixed leaves and potatoes.
For extra-thick ham steaks, buy a boneless mini ham, then cut steaks to desired thickness; cooking time will vary.
