Free-form mediterranean pie

This crumbly, golden pie is stuffed with fresh Mediterranean vegetables, crumbly feta and tasty salami to create a delicious free form pie with minimal effort.

Ingredients

Method

1.Preheat oven to 200°C (180°C fan-forced). Lightly grease and line 2 oven trays with baking paper.
2.Cut corners from pastry sheets to form rounds and place these on trays.
3.In a bowl, combine all remaining ingredients. Toss to coat in oil and season to taste.
4.Divide mixture between pastry rounds, leaving a 4cm border. Pleat pastry around filling by pinching, to retain shape and form an edge. Leave the top open.
5.Bake 30-35 minutes, until the pastry is golden and crisp. Cut into quarters and serve topped with rocket leaves.

Salami can be replaced with leftover cooked chicken or cooked and sliced sausages. A sprinkling of crumbled feta can be added before serving.
