Method
Four-cheese pasta bake
1.Preheat oven to moderate. Lightly grease deep 3-litre (12-cup) baking dish.
2.In a large saucepan of boiling water, cook pasta until just tender.
3.Meanwhile, make four-cheese sauce.
4.Drain pasta; return to same pan with onion, tomato and cheese sauce; toss gently to combine. Transfer pasta mixture to prepared baking dish.
5.Combine oil, garlic and basil in medium bowl; add bread, toss gently to combine topping mixture.
6.Sprinkle topping mixture over pasta bake in even layer; cook, uncovered, in moderate oven about 15 minutes or until topping is browned lightly and pasta bake is cooked through.
7.Meanwhile, make parmesan and baby spinach salad. Serve pasta bake with spinach salad.
Four-cheese sauce
8.In a medium saucepan, melt butter; add flour; cook, stirring, until mixture bubbles and thickens. Gradually add milk; cook, stirring, until sauce boils and thickens. Remove from heat, add cheeses; stir until smooth.
Parmesan and baby spinach salad
9.In a large bowl, combine spinach, parmesan and pine nuts. In a screw-top jar, combine balsamic and olive oil; shake well. Drizzle dressing over salad; toss gently to combine.
