Ingredients

Method

1.Heat 1 tablespoon oil in a large frying pan on high. Cook 4 fillet steaks for 4-5 minutes, each side, until cooked to taste. Transfer to a plate. Rest, covered, for 5 minutes.
2.Add plain flour to the same pan. Cook, stirring, for 1 minute. Blend in white wine and water, sherry and powdered beef stock. Bring to the boil, stirring, until sauce thickens.
3.Reduce heat to low. Simmer 3 minutes. Stir through green peppercorns and cream. Simmer 1 minute. Serve steaks drizzled with sauce. Accompany with steamed vegetables of choice.

If preferred, use horseradish cream or grain mustard in place of green peppercorns.
