1.Heat the oil in a medium saucepan over low heat. Add tomatoes and garlic. Season with salt and pepper Cook, stirring occasionally, for 6-8 minutes or until the tomatoes are soft. Add noodles (discarding the flavour sachet) and ¾ cup (180ml) boiling water. Bring to a simmer and cook for 1 minute or until just tender.
2.Add tuna and cook for 1 minute or until heated through. Toss with spinach and serve with a little lemon rind and juice, black pepper and extra oil.
You can add extra herbs or capers to this dish, or use a chilli-flavoured tuna for a little extra punch.
Note
