Method
1.Preheat oven to 200°C/180°C fan forced. Line two baking trays with baking paper. Heat a large frying pan over moderate heat. Spray sausages with oil. Add to pan: cook and turn for 6-8 minutes or until browned and cooked. Transfer to a chopping board. Cool slightly; slice.
2.Heat oil in same pan. Add onion; cook and stir for 5 minutes or until soft. Add flour and curry powder; cook and stir for 1-2 minutes or until fragrant. Add carrot and stock: bring to the boil. Reduce heat. Cover simmer for 10 minutes. Return sausage to pan. Simmer, uncovered, for 5 minutes or until sauce thickens slightly. Remove from heat.
3.Place bread on prepared trays. Spread pizza sauce over bread; top with sausage mixture. Bake for 8-10 minutes or until base is golden. Out in half. Combine yogurt and chopped mint in a small bowl. Place naan halves on serving plates. Top with yogurt mixture and extra mint leaves. Serve with salad.
Brush noon with vegetable or olive oil instead of sauce.
