1.Preheat oven to 180°C. Line a baking tray with foil.
2.Brush chicken with yogurt, then dip in combined breadcrumbs, parmesan and parsley, pressing on firmly. Transfer to a plate and chill for 20 minutes.
3.Arrange chicken on prepared tray. Spray with olive oil. Bake for 25-30 minutes, until chicken is cooked through and golden. Serve with potato wedges.
Drizzle chicken with a little olive oil before baking, if desired. Prepare wedges according to packet directions and bake while cooking chicken.
