Chilli , zucchini and lemon pasta
Method
1.Cook spaghetti in a large saucepan of boiling water following packet instructions. Drain. Meanwhile, heat oil in a saucepan on medium. Saute onion, garlic and chilli flakes for 5 minutes or until onion is tender.
2.Stir in zucchini, zest, lemon juice and parsley and cook tor 2 minutes. Season to taste. Toss zucchini mixture through pasta until combined. Serve topped with grated parmesan.
