1.Preheat oven to 200°C/180°C fan forced. Line a baking tray with baking paper. Line a 21x10cm loaf pan (base measurement) with baking paper, extending paper at long sides for handles.
2.Place bread in a large bowl. Add water, mixing with hands to break up. Add mince, green onion, spice mix, egg and beans; mix well.
3.Press mixture firmly into prepared pan; turn out onto prepared tray. Discard lining paper.
4.Bake meatloaf for 35 minutes. Brush with sauce; bake for 10 minutes more or until cooked.
5.Meanwhile to make salsa; combine tomato, red onion, juice and coriander in a bowl. Season.
6.Top meatloaf with avocado, then spoon on tomato mixture and sour cream. Season with pepper. Serve with salad.

Make ahead: Cook meatloaf a day before serving. Reheat in an oven preheated to 180°C/ 160°C fan forced for 20 minutes. Salsa is best made close to serving. Chilli seasoning mix too spicy? Use taco seasoning.
