Ingredients

Method

1.Preheat oven to 200°C.
2.Brush eggplant and chicken fillets with oil. Season with salt and pepper.
3.Preheat a char-grill on high. Cook chicken 2-3 minutes, each side, until browned. Arrange chicken in a baking dish.
4.Char-grill eggplant 2-3 minutes each side, until tender.
5.Place a piece of eggplant over each piece of chicken. Top each with ham slice and equal amounts of sauce and mozzarella.
6.Bake 10-15 minutes, until golden and chicken is cooked through. Serve with salad, if you like.

Store leftover eggplant in an airtight container in the fridge for up to 4 days. Use in salads, bakes, pastas, toasted sandwiches etc.
