Method

1.Heat oil in a heavy-based frying pan over moderate heat. Add onion; cook and stir for 3 minutes or until softened. Add garlic; cook and stir for 30 seconds or until fragrant. Add chicken; cook and stir for 5 minutes or until cooked. Season.
2.Sprinkle flour over chicken; cook and stir for 1 minute. Combine crumbled stock cube and 1 1/2 cups boiling water in a jug until dissolved.
3.Add to chicken with mushroom, carrot and tarragon. Bring to the boil, stirring, over moderate heat. Reduce heat to low. Cover; simmer, stirring occasionally, for 10 minutes or until vegetables are tender.
4.Remove from heat. Stir in sour cream and parsley until combined. Serve spooned over rice and sprinkled with parsley sprigs.

Swap chicken thigh fillet for diced pork scotch fillet or veal.
