1.Heat oven to 210C. Combine chicken mince, spring onions, breadcrumbs, chopped peanuts, parsley and egg white in a bowl and season well with pepper.
2.Mix together, pounding the mixture with your hand for a couple of minutes (this will help the meatballs to hold together when they’re cooked).
3.With damp hands (to stop mixture sticking) shape into 16 even-sized balls. Place meatballs in an oven pan that’s been lined with baking paper.
4.Bake for 15 minutes or until browned and cooked through. Serve on a bed of rice and spinach. Drizzle each serving with a teaspoonful of sweet chilli sauce.
