Method

1.Cook pasta in a large saucepan of boiling salted water for 10 minutes or until just tender. Drain; return to pan.
2.Meanwhile, heat oil in a large frying pan over moderately low heat. Add onion; cook and stir for 10 minutes or until onion caramelises. Heat butter in a large heavy-based saucepan until it just begins to colour. Add walnuts, figs and thyme; cook and stir over heat until butter is brown.
3.Add onion, butter mixture and chicken to pasta. Season with salt and pepper. Gently toss ingredients until combined. Combine rocket and vinegar in a medium bowl. Spoon pasta onto serving plates. Top with rocket and parmesan. Serve.

You can use any pasta shape; cooking time may vary. For a deliciously rich nutty taste, heat butter until a nut brown colour. To prevent butter burning, quickly remove pan from heat and transfer batter to pasta.
