Method
1.Cook pasta in a large saucepan of boiling, salted water, following packet instructions. Drain well.
2.Meanwhile, melt butter in a medium saucepan on high. Blend in flour. Cook, stirring, for 1 minute. Remove from heat.
3.Gradually stir in milk until smooth. Return to heat and cook, stirring, for 1-2 minutes, until mixture boils and thickens.
4.Reduce heat. Simmer for 3 minutes. Fold in pasta, vegetables, tomato and half the cheese. Season to taste.
5.Preheat grill to hot. Spoon mixture evenly between four 1 1/4-cup capacity heatproof dishes. Sprinkle with remaining cheese. Grill for 3-5 minutes, until cheese melts and is golden. Serve hot. Accompany with green salad.
Use one 5-cup capacity baking dish, if preferred.
