Method

1.Preheat oven to moderate, 180°C. Rub potatoes with oil, season, and wrap in foil. Bake on tray in oven 45-60 minutes, or until tender. Allow to cool slightly. Unwrap and cut a slit halfway through each potato. Place on a foil-lined oven tray.
2.Toss ham, avocado, tomato, green onions together with a few drops of Tabasco sauce and finely grated zest and juice of lime. Season to taste.
3.Spoon mixture among potatoes. Sprinkle with grated parmesan.
4.Bake 5 minutes until hot and cheese is melted. Serve with a dollop of sour cream.
