Method

1.Preheat oven to 200°C/180°C fan forced. Grease 4 x 1 1/2-cup shallow ovenproof dishes. Place dishes on a baking tray.
2.Cook pasta in a large saucepan of boiling salted water for 10 minutes or until tender. Drain; return to pan.
3.Heat oil in a medium saucepan over moderate heat. Add bacon: cook and stir for 8-4 minutes or until crisp. Transfer to paper towels.
4.Melt butter in pan. Add onion; cook and stir tor 5 minutes or until soft. Add flour; cook and stir for 1 minute. Remove from heat.
5.Gradually stir in cream and milk. Return to heat; cook and stir tor 4-5 minutes or until mixture boils and thickens slightly. Add bacon and spinach. Remove mixture from heat.
6.Add half the tasty cheese; mix well. Season with salt.
7.Spoon mixture into prepared dishes; top with remaining cheeses and tomato. Bake for 20 minutes or until cheese melts. Serve.

Any short, shaped pasta will work in this recipe. Try any combo of cheeses you like. Use a mixture of cream and cream cheese.
