1.Place noodles in medium heatproof bowl, cover with boiling water; stand until tender, drain.
2.Meanwhile, shell and devein prawns, leaving tails intact.
3.Combine prawns, rind, garlic, ginger and half the sweet chilli sauce in medium bowl. Cook prawns on heated oiled barbecue (or grill or grill pan) until changed in colour.
4.Combine prawns, noodles, remaining sweet chilli sauce, juice, fish sauce, vegetables and coriander in large bowl; season to taste.
