Baked pork and green peppercorn apples

Stuffing apples with a savoury mix of pork and peppercorns is such an easy and fun dish to make. Once baked and dusted in fresh Parmesan, you’ll be rewarded with a deliciously satisfying meal.

Method

1.Heat oven to 170ºC.
2.Use a small knife (or an apple corer if you have one) to remove the core and some of the flesh of each apple (I make the cavity bigger to allow for more stuffing). Brush the skin of each apple with some of the olive oil.
3.In a bowl, mix the pork mince, peppercorns, salt, remaining olive oil and breadcrumbs. Your hand is the best kitchen tool for this job!
4.Fill the cavity of each apple with the pork stuffing. Place the apples in a small oven dish and cover tightly with foil. Bake for 30 minutes or until the apples are soft to the point of collapse.
5.Shower with freshly-grated Parmesan and serve with a green salad.

Green peppercorns have a warming, floral flavour that pairs well with pork and apple.
