Method
1.Cook pasta in a saucepan of boiling salted water for 4 minutes or until just tender. Drain, reserving l/2 cup of the cooking liquid. Return pasta and cooking liquid to pan.
2.Meanwhile, heat half the oil in a separate saucepan over moderately high heat. Add salami; cook, stirring, for 4 minutes. Add salami, tomato, olives and basil to pasta; toss to combine. Season with pepper.
3.Serve pasta drizzled with remaining oil. Top with extra basil and parmesan.
Substitute pasta with low-GI noodles, such as udon, rice or hokkien.
