Method

1.Place 360g white chocolate and cream in a heatproof medium bowl; place over saucepan of simmering water (don’t let water touch base of bowl). Stir for 3-4 minutes or until melted and smooth. Remove from heat; stir in cranberries and pistachios. Cover with plastic food wrap; chill, stirring occasionally, for 1 hour or until firm.
2.Meanwhile, line 2 baking trays with baking paper. Place dark chocolate in a small heatproof bowl; place over saucepan of simmering water (don’t let water touch base of bowl). Stir for 1-2 minutes or until melted and smooth. Cool slightly. Place chocolate in a small piping bag; pipe 12 x 2cm lengths on a prepared tray (for the arms) and 6 x 5cm circles (for hats). Sprinkle circles with 100sand1000s. Set.
3.Roll white chocolate mixture into 6 x 1 1/2 tablespoon balls. 6 x 1 tablespoon balls and 6 x 1 1/2 teaspoon balls. Roll balls in coconut. Place chocolate truffles on remaining tray. Chill for 5 minutes to set.
4.For each snowman, dot a little extra melted white chocolate on a large truffle. Top with a medium truffle. Dot with a little more white chocolate, then top with a small truffle. Set. Using a little melted white chocolate, secure arms on snowmen. Cut jelly beans in half for noses ancl in slices for eyes. Secure in place. Attach a marshmallow to each circle; secure to the top of each snowman as the hat.

Makes 6 To make snowmen go further, stack 2 balls instead of 3. To melt chocolate and cream in the microwave, place in a microwave-safe bowl. Microwave on High (100%) in 30-second bursts, stirring, until melted and smooth. You can use chocolate bullets for the nose.
