Method

White chocolate mousse

1.Place white chocolate in a large heat-proof bowl over a saucepan of simmering water. Stir occasionally until smooth, then remove bowl from heat and cool.
2.In a bowl, whip cream until soft peaks form. Beat egg yolks into the melted chocolate, then fold in cream.
3.In a large bowl, beat egg whites until stiff peaks form. Fold egg whites into chocolate mixture.

Homemade honeycomb

4.Line a large oven tray with baking paper. In a large saucepan, combine sugar, water and honey.
5.Stir on low until sugar dissolves, then bring to the boil for 8-10 minutes, without stirring, until toffee turns golden. Remove from heat, then set aside for 30 seconds until bubbles subside.
6.Quickly use a wooden spoon to stir in soda. Mixture will foam. Pour onto tray and set aside until firm. Break into pieces.
7.Fold quarter honeycomb and half the Flake pieces through mixture, then spoon into four large glasses or bowls. Chill for 2 hours or overnight.
8.Top mixture with remaining honeycomb and Flake to serve.

Be careful when handling toffee mixture as it is very hot and will burn.
