Method
1.Sift flour into a large bowl. Stir in sugar, milk, eggs and vanilla until combined and smooth.
2.Heat a small non-stick frying pan on medium. Brush with a little margarine. For each pikelet, spoon 1 tbsp of batter into pan. Cook pikelets, in batches, 1 minute, until bubbles appear on surface. Turn and cook For 1-2 minutes, until golden brown and cooked through. Transfer to a plate and cover with foil to keep warm. Repeat process until all batter is used.
3.Meanwhile, combine ricotta, honey and cinnamon in a small bowl.
4.Place blackberries and icing sugar in a small saucepan on low heat and cook, stirring, for 2-3 minutes, until syrupy. Remove from heat. Allow to cool slightly, then stir in blueberries and raspberries.
5.Serve pikelets with ricotta and berries. Drizzle with extra honey.
