Method
1.Place dark chocolate in a small, heatproof bowl over a saucepan half-filled with simmering water (make sure the bowl doesn’t touch the water). Stir with a metal spoon until chocolate melts. Remove from heat. Mix in 2 egg yolks (mixture will become firm). In a separate bowl, repeat with milk chocolate and remaining egg yolks.
2.Use a large metal spoon to fold half the cream into the dark chocolate mixture until well combined. Fold remaining cream into milk chocolate mixture.
3.In a large bowl, using an electric mixer, beat egg whites until soft peaks form. Gradually add sugar, 1 tablespoon at a time, beating until sugar dissolves and mixture is thick and glossy.
4.Fold half the egg white mixture into the dark chocolate mixture, until just combined. Fold the remaining egg white mixture into the milk chocolate mixture, until just combined.
5.Spoon the milk chocolate mixture into six 3/4-cup serving glasses. Top with the dark chocolate mixture.
6.Place on a tray. Cover and chill for 3 hours, until set. Top with shaved white chocolate. Serve with cream.
