Ingredients

Method

1.Preheat oven to moderate, 180°C. Lightly grease and flour a 22cm square pan and an 18cm round pan, shaking out excess. Line 4 holes of a regular muffin tray with paper patty cases.
2.Spoon one cake mixture into square pan. Divide remaining mixture between muffin cases and round pan.
3.Bake 15-20 minutes. Remove cupcakes from oven. Bake large cakes a further 20-25 minutes, until cooked when tested. Cool in pan 5 minutes. Turn out onto wire racks to cool completely.
4.Cut paper templates for body head and ears. Using a small, sharp knife, cut out shapes. Use remaining cake from round pan to make arms.
5.Trim bottom corners for cupcake feet. Position shapes to form teddy. Cut one cupcake in half horizontally and position with smaller half on top for nose, as shown.
6.Tint a little buttercream blue. Set aside. Tint remainder yellow.
7.Spread all body parts with yellow buttercream. Join body, using toothpicks to secure arms. and fix on board with a little buttercream.
8.Arrange tic tacs to create centre stitching. Place one white chocolate melt on each ear and one on each foot. Cut 3 melts in half and arrange on feet, as shown. Cut eyebrows. nose and mouth from liquorice straps and position on face, as shown.
9.Spread last cupcake with blue buttercream. Position between arms, securing with toothpicks. Finish with a candle.

When baking cakes, do not fill the pans more than two-thirds full.
