Method
1.Preheat oven to 180°C (160°C fan-forced). Grease one hole of the patty pan; grease five holes of the standard muffin pan; grease one hole of the texas muffin pan.
2.Make cake according to directions on packet. Drop 3 level teaspoons of the mixture into the greased patty pan hole; bake about 10 minutes. Drop 2½ level tablespoons of the mixture into the greased standard muffin pan holes; drop ⅓ cup of the mixture into the greased texas muffin pan hole; bake cakes about 20 minutes. Stand cakes in pans 5 minutes; turn, top-side up, onto wire rack to cool.
3.To make butter cream; beat butter until white as possible, gradually beat in half the sifted icing sugar then milk, then remaining icing sugar. Beat until smooth. Divide butter cream equally between two small bowls; tint one bowl pink and the other green.
4.Level cake tops. Using picture as a guide, trim the five standard muffin cakes to make teacup shapes. Using a 4cm-round cutter, mark circles on the five teacup shapes. Scoop out cake from the cups, making 4cm-deep hollows. Trim texas muffin cake to make teapot shape.
5.Turn giant freckles upside-down; spread the bases with pink or green butter cream to make saucers. Position on prepared board; secure with a little butter cream.
6.Spread the teacups, inside and out, with pink or green butter cream; position on saucers. Position small fruit rings on teacups for handles.
7.Spread green butter cream all over teapot. Position on prepared board; secure with a little butter cream. Spread pink butter cream over rounded bottom of patty cake; position on teapot for lid, top with a small fruit ring half. Cut large fruit ring in half; shape end and position for the teapot handle and spout, secure to teapot with toothpicks. Decorate lid with icing hearts. Sprinkle 2 teaspoons of the sugar into two of the cups to resemble tea, if you like.
