Method
1.Line a 19x9cm (base measurement) loaf pan with 2 layers of baking paper.
2.Let ice-cream soften slightly, then fold in honeycomb bar and strawberry. Transfer ice-cream mixture to prepared pan. Level top. Cover with plastic food wrap. Freeze for 1 hour or until firm.
3.Transfer ice cream mixture to clean chopping board; carefully cut into 6 thick slices.
4.Sandwich an ice-cream slice between 2 lattice biscuits. Continue to sandwich remaining ice-cream slices and lattice biscuits to make a total of 6 sandwiches.
5.Drizzle sandwiches with chocolate. Serve immediately.
To melt chocolate, place in a small microwave-safe bowl. Microwave on High (100%) in 30-second bursts, stirring, until melted and smooth.
