Strawberry crush

This English dessert is often called Eton Mess, taking its name from Eton College, one of Britain's most famous public schools, where it was traditionally served. The `mess' part is because it was all mixed together in one big bowl.

Ingredients

500 gram (1 pound) strawberries, hulled, quartered

1 tablespoon orange-flavoured liqueur

2 tablespoon icing (confectioners') sugar

300 millilitre thickened (heavy) cream, whipped

3/4 cup (200g) thick greek-style yoghurt

5 pavlova nests (50g), crumbled coarsely

Method

1.Combine strawberries, liqueur and sifted icing sugar in a medium bowl. Stand 5 minutes; stir well.

2.Meanwhile, combine cream, yoghurt and pavlova nests in a medium bowl.

3.Place half the cream mixture in four 1-cup (250ml) serving glasses. Top with half the strawberry mixture, then remaining cream mixture and strawberry mixture. Serve immediately.
