Spiced star biscuits

These beautiful star-shaped biscuits are perfect for Christmas gifts or children's parties. Golden, crumbly and spiced to perfection, they are beautiful topped with a smooth icing and enjoyed with a pot of tea.

Ingredients

Method

1.Preheat oven to 180°C (160°C fan-forced). Line two baking trays with baking paper.
2.Using an electric mixer, beat treacle, brown sugar, butter and egg until pale and creamy. Combine flour, bicarbonate of soda and spices; add to treacle mixture. Stir to combine.
3.Turn out dough onto slightly floured surface and knead until smooth. Cover with plastic wrap and chill in fridge 30 minutes.
4.Divide dough into two equal portions. Roll one portion between sheets of baking paper, until 5mm thick. Using an 8cm star pastry cutter, cut stars from pastry. Using a 3cm star cutter, cut an inner star from each large star.
5.Place small and large stars on prepared trays. Continue with remaining portion of dough. Bake small stars 6 minutes. Bake large stars 9-10 minutes, until golden brown. Remove from oven. Cool completely on trays, to allow biscuits to firm.
6.Combine icing sugar and 1-2 tablespoon water to make a smooth icing. Top biscuits with icing.

This recipe should yield 22 large stars and 22 small stars.
