1.Preheat oven to 180°C/160°C fan-forced. Grease and line a 30 x 20cm (base measurement) slice pan with baking paper, extending paper at long sides for handles.
2.Using an electric mixer, beat butter and sugar in a small bowl until pale and creamy. Beat in eggs, one by one, until combined. Stir in golden syrup, then transfer mixture to a large bowl.
3.Sift flour, bicarbonate of soda and mixed spice over butter mixture. Add hot water, stirring until just combined. Spread mixture into prepared pan; smooth surface.
4.Peel, core and quarter pears. Slice thinly. Arrange pear, overlapping slightly, over cake mixture in pan. Bake for 40-45 minutes or until a skewer inserted at centre comes out clean. Remove cake from oven, then stand in pan for 5 minutes. Transfer to a wire rack to cool completely. Dust with icing sugar. Serve with custard.
