Method

1.In a small saucepan, combine sugar and water. Stir on medium heat until sugar dissolves. Bring to boil and cook for 5 minutes. Add glucose, stirring until dissolved. Remove from heat and cool.
2.In the bowl of an ice-cream machine, combine syrup, sour cream and coconut cream. Churn following manufacturers instructions until firm (about 30 minutes).
3.Transfer to a chilled 6-cup freezer container. Freeze until completely firm.
4.Serve in scoops with sliced strawberries, chocolate sauce and wafers if liked.

If you don’t have an ice-cream machine, combine all ingredients and freeze until mixture is almost set. Process to remove ice crystals and refreeze.
