Method
1.Preheat oven to 160°C/140°C fan forced Line 2 baking trays with baking paper.
2.Roll tablespoons of Basic Shortbread dough into balls. Place on prepared trays, about 3cm apart. Using a lightly floured fork, flatten each ball slightly.
3.Bake for 12-15 minutes or until lightly browned underneath. Remove from oven. Cool completely on trays (biscuits will firm).
4.Using an electric mixer, beat butter in a medium bowl until pale and creamy Add sugar, 1/3 cup at a time, beating until well combined. Stir in passionfruit pulp. Sandwich passionfruit mixture between biscuits.
5.Serve dusted with extra icing sugar.
