Method
Sand castle
1.Preheat oven to moderate, 18O°C. Lightly grease and flour a 9-cup pudding basin.
2.Create cake mixture as per packet instructions. Spoon mixture into basin, smoothing top. Bake for 40-45 minutes, until cooked when tested with a skewer. Cool in basin for 5 minutes before transferring to a wire rack to cool completely. Trim top of cake to create a flat surface and invert cake.
3.Tint butter cream with yellow food colouring. Spread all over sides and top of cake. Smooth the surface with a spatula. Transfer cake to serving board or plate.
To decorate
4.Cut out triangles of paper, glue onto toothpicks and allow to dry. Top cake with flags and arrange starfish as shown.
For a more elaborate cake, add some chocolate shells (or make your own using melted chocolate and chocolate shell moulds).
