Method
1.Place egg yolks, caster sugar and wine in a large heatproof bowl. Whisk until combined.
2.Place bowl over a pan of simmering water and whisk mixture constantly for 8-10 minutes, until thickened and doubled in volume.
3.Divide berries among serving glasses. Pour Sabayon over. Serve with almond bread or biscotti.
Do not allow water to touch base of bowl as it may cause mixture to curdle due to overheating.
