Rocky road brownie

These rocky road brownies with a chewy layer of marshmallow and peanuts are sure to go down a treat and the kids will hardly be able to wait until the brownies are cool!

Ingredients

Method

1.Preheat oven to 170°C/150°C fan forced. Grease and line a 26 x 16cm (base measurement) slice pan with baking paper, extending paper at long sides for handles.
2.Combine butter and milk chocolate in a saucepan over low heat. Cook and stir for 5 minutes or until melted and smooth. Remove from heat. Stir in sugar, then egg; mix well.
3.Sift flour and cocoa powder over chocolate mixture. Stir until combined. Stir in peanuts, coconut and two-thirds of the dark chocolate.
4.Pour mixture into prepared pan; level surface. Bake for 45 minutes or until cooked when a skewer inserted at centre comes out with crumbs attached.
5.Cover top of brownie with marshmallow, cut-side down. Return to oven for 30 seconds or until marshmallow has softened. Cool in pan.
6.Place remaining chocolate in a heatproof bowl over a saucepan of simmering water (don’t let base of bowl touch the water). Stir until melted and smooth. Transfer brownie to a board. Cut into 20 pieces. Drizzle melted chocolate over brownie pieces in a crisscross pattern. Stand until chocolate sets. Serve.
