Method
1.In a large saucepan, combine coconut milk, rice and star anise. Stir over medium heat until boiling.
2.Reduce heat to low and simmer, stirring occasionally, 15-20 minutes until rice is tender.
3.Mix in sugar and vanilla, increase heat to medium and bring to boil. Reduce heat to low and simmer a further 2 minutes, until the rice is soft and thickened.
4.Spoon mixture evenly among serving bowls. Serve warm or cold topped with swirls of extra coconut milk, chopped ginger and sprinkled nutmeg.
The rice pudding mixture will thicken further upon cooling.
