These raspberry jelly creams are a great make-ahead dessert as they need to be chilled for 4 hours.

Method

1.In a small saucepan, combine berries, sugar and water. Stir over low heat, until sugar dissolves. Simmer 5 minutes until berries soften. Strain through fine sieve and discard seeds. Reserve 3/4 cup.
2.Sprinkle gelatine over just-boiled water in a jug. Whisk vigorously with a fork until dissolved. Whisk into berry mixture. Pour evenly among 10 x 1/2-cup glasses. Cover and chill 4 hours, until set.
3.Spoon cream among glasses. Top with fresh raspberries and drizzle with reserved berry mixture. Sprinkle with crushed meringues, if liked.
