Method

1.Preheat oven to 180°C/160°C fan forced. Line a 12-hole (1/3-cup) muffin tray with paper or foil cases.
2.Using an electric mixer, beat butter and sugar in a small bowl until light and creamy. Add eggs. one by one, beating well after each addition.
3.Fold in flour and milk until just combined; fold in raspberries and turkish delight. Spoon mixture into prepared cases.
4.Bake for 25 minutes or until a skewer inserted at centre comes out clean. Transfer to a wire rack to cool completely.
5.Sift icing sugar into a medium heatproof bowl; add extra butter. Pour in 2 tablespoons of boiling water. Stir to melt butter and make a smooth, thick icing adding a little more boiling water if necessary. Spread icing over cupcakes. Top with extra raspberries.

Use scissors dipped in icing sugar to cut Turkish Delight.
